Enable autostart for Gitea and monitoring VMs

Set onboot=1 on VM 100 (gitea) and VM 101 (monitoring) so they start automatically on Proxmox host boot. Co-Authored-By: Claude Sonnet 4.6 <noreply@anthropic.com>
